Our new meal solution recipe brought to you by Lowe’s Foods is curry chicken with apples and wheat pasta. The first thing we need to do is remove the skin from our split chicken breast. We’re going to cut it up into chunks and in a hot skillet with some cooking spray, we’re going to cook it till it’s nice and brown. Once it is brown, we’re going to set it aside, add some more cooking spray to that same pan. We are going to sauté and caramelize some garlic and onions. While our onions and garlic are browning, we’re going to go ahead and put in our wheat pasta to some boiling water and we’re going to cut up our apples, the best way to hold apples without browning is in pineapple juice. When our onions are perfectly caramelized, we’re going to add in those apples, curry powder, those chicken breast chunks that we set aside and we’re going to deglaze with some chicken stock. Once that chicken stock mixture is to a boil, we need to thicken it so take the remaining chicken stock, add that flour, we’re going to whisk it together and next, we’re going to whisk it right into that mixture until it is nice and thick. And at about that time, our pasta should be done, it takes about 8 to 10 minutes. We’re going to go ahead and plate it up and right on top, we’re adding our curry chicken with apples. This looks and smells absolutely amazing. I actually did this in less than 20 minutes. Don’t be afraid, you can do this.
