Beryl Stokes: Hi! And welcome to Cajun Cooking TV. It's Sunday morning and we are going to be cooking for our family tonight, so we are cooking our Sirloin Tip Roast and we've got some vegetables here. So, let me show you how I put it together.
First of all, we have this beautiful 3 pounds Sirloin Tip Roast. I have some turnip roots, which are these roots in the store that you'll see, there are white and kind of purplish pink, and I just peeled those and cut them into quarters, these are good, good vitamins to get, and your kids will think they are potatoes. I've got some baby carrots here; I have some shallots and some diced garlic pods. I've got my slow cooker heating right here. So let's season this meat and we'll get it ready to put on it.
First thing I'm going to do is cut several holes into the stake here, just kind of hold it out, take a garlic pod and stick it in there. Can you see that, Mike?
Mike: Um-huh.
Beryl Stokes: Garlic pod. I learned these from my grandmother. She would do this with her roast and I can just remember even as a little kid wanting a piece that would have that garlic in there, because it will be so good. Stick that in there. This roast is tied together with some string too. Put those in, you can do it. I've got all the garlic pressed into the roast and turned it over and put it in several spots. So just press it down in there. Now I am ready to season the meat. I am just going to sprinkle Tony Chacheres all over. You don't have to have a heavy hand in here. Flip it over, same on both sides. I am going to turn it and get this front here. I am going to flip it with one hand. There we go. Alright. We got him all seasoned.
So, now I'm going place him in the slow cooker. Add one tablespoon of olive oil down here just so he doesn't stick. We've got lots of room to put some good vegetables. So I've got my shallots; they are almost like little tiny purple onions, throw those down and they offer some good flavor and we've got our turnip roots. Get them in there and baby carrots. This is the only my colleague cook carrots. So, it's a good way to get some good vegetables in your family, good plate. So, then with a slow cooker all you do is, put in about one cup of water, you don't have to put much water, because a slow cooker will create its own juices. I've got this on number three and I am going to cover it, and just check.
So, I had some Cajun trinity in the freezer, which is bell pepper, onions and garlic, all cut up, I'll do it all at one time, when I am ready. So I'm just going to toss this in here also. That will help that be very flavorful. So then we've got to put the top on and leave it alone for 8 hours.
