Billy Parisi: Thanks for checking out fixmyrecipe.com. Chef Billy Parisi here, our new fix goes to all those people submitting recipes for vegetable fixes. They know more of this, I don’t know what to put in my chicken, I don’t know what to put in my stake. This is last episode for now of the vegetable series. Pay close attention, you are going to love this Green Bean Fix.
I am going to show you all two different styles of Green Beans. One is a little fatty or little less healthy and one is super healthy for both you green bean phonetics. The first green bean, we’re going to fix is a country style green bean. So, we are going to render awesome Bacon in a hot skillet.
I absolutely love Bacon. If I do one thing for the rest of my life, it probably would be Bacon, so I can’t wait; we put in this our green beans. Let’s go ahead and set this Bacon to the side, alright, and in this same skillet we are just going to add in our garlic and shallots, using all that yummy Bacon fast. Then, we are going right back to the burner. We are going to caramelize these garlic and shallots really well and then we are going to blaze with white wine until it’s almost gone, that we are going to hit it with cream, we do so and that will get super nice and think. This is actually perfect timing because while our heavy cream is reducing, we are going ahead and pour boil our green beans.
Once our cream is nice and reduced, we are going go ahead and add back in that Bacon and we are going to stir in some whole butter like I said, lots of fat and flavor in this and next we are going to simply season the taste with salt and pepper. Oh, again perfect timing, our sauce is done and it looks our green beans are done to. As I am showing you two different style of green beans, we are only going to use half of this for our country style. So, let’s go again and add these green beans into our country style sauce.
Oh man, it’s probably one of my favorite vegetables, seriously, but let’s kick it to the healthy spot. So, in a little hot skillet, a little bit of extra virgin olive oil, we are going to sauté of some garlic and shallots. Next we are going to throw in our green beans, the glaze with a little Balsamic vinegar and we are going to use a little bit of rind of fresh lemon and lemon juices; season with salt and pepper and we’ll have really super healthy and tasty green beans.
Oh man, the smells in this kitchen are absolutely for now, let’s go ahead and plate up our two different types of green beans. Oh man, you have two incredible green beans right here. We got one for a little more fatty, and little more flavor, and one if you are in a diet and want some super healthy vegetables; be sure though to try out both of these green bean fixes.
