Rhiannon Ally: The Scotto’s know a thing or two when it comes to cooking up some great Italian dishes. So, we went into the kitchen to check their recipe for chicken parmesan that now, you can get anywhere in the country.
Marion Scotto: It not only should look good but it’s got to taste good. Hi! I’m Marion Scotto.
John Scotto: John Scotto.
Marion Scotto: That’s my son John who thinks he’s a comedian and our restaurant is Fresco by Scotto and I think we really got to concentrate.
John Scotto: It’s our day, don’t worry.
Marion Scotto: So anyway, we’re here to show you how we make out Schwan’s dinners and we’re so proud to be associated with them because they make their food as delicious as my food is in Fresco by Scotto restaurant.
So now, we’re going to show you how to make our famous chicken parmesan.
John Scotto: Now, we have the chicken breast. What we’ll do is we have an egg wash. We coat the chicken with the egg wash getting all sides. Make sure you got enough on it. You take it from the egg wash into just breadcrumbs, store bought breadcrumbs and you put it all. Make sure it’s on all sides. You got to get it nice, keep turning it over.
Now, the chicken is ready to be cooked. Some olive oil, about three minutes until it’s golden brown on each side.
Marion Scotto: Not too much John. Our parmesan is not smothered in tomato sauce. It’s there but it’s not all over. And you know, my grandchildren and my children love—
John Scotto: Giovanni.
Marion Scotto: His name is John. So, he is the chicken pon. Okay, John. Parmesan cheese please and a drizzle John, just a drizzle up on top, a drizzle. Thank you, thank you. Because we want all of you to taste the recipe, taste the chicken and taste the cheeses and it’s so good and it even tastes better the next day. So, enjoy this dish. We’re going to put it in the oven and when we take it out, it’s going to be smoking hot.
