Hey and thanks for checking out another episode of fixmyrecipe.com, Chef Billy Parisi here and our next recipe was submitted to us from Bonnie Fletcher of Western Springs, Illinois. She sent us a recipe for sautéed chicken with supreme sauce and mushrooms. I can definitely see where you went wrong because this recipe is nowhere near right. Stick around, Bonnie, we’re going to hook you up. Just like on our other video, we need to make a quick lawn rue. While our chicken stock is simmering, let’s make a rue, first put in our butter, get it melting, then add in our flour. Now, remember, you want to do equal parts, butter and flour. Once our chicken stock is boiling, we’re going to add this rue right in to make a chicken ballotine, then on to the supreme sauce. While our sauce is cooking, let’s pound up this chicken breast and don’t forget, not too thin. You want a nice thick juicy breast. Now, let’s season our chicken breast, dredge it in flour and get it ready for sautéing. Alright, next step is to tamper our cream with our chicken ballotine because you don’t want the cream to cook, alright? Make sure you get a fine strainer like a shinwa, pour a little bit in first, alright. Set it to the side and whisk away a little bit here. Simply add it all in. Now that our ballotine is together with our cream, we’re going to add it back in our sauté pan, put it back on the burner and give it some seasonings. Alright, once our chicken ballotine and cream is simmering, we are going to add in salt, white pepper and a little bit of lemon juice. While our supreme sauce is simmering, we can go ahead and sauté off this chicken breast, heat it with little garlic, mushrooms and a lot of flavor that you’ve been missing, we’re going to go from there. Alright, we’re going to set our chicken to the side and make our mushroom sauce. Fresh domestic mushrooms, and of course, some garlic, I can’t resist myself, and some fresh parsley. We’re just going to sauté this off and add our lovely supreme sauce. Alright, we’re going to add our supreme sauce here, finish with a little butter, alright, let’s plate up our chicken breast here. Bonnie, everything looks and smells awesome. Remember, start with a good chicken stock, don’t forget to thicken with the rue and when making your mushroom sauce, mushrooms and garlic.
