Male: Here’s an easy entertaining tip from Michael Chiarello.
Michael Chiarello: One of my favorite soups of all time is broccoli soup, very green broccoli soup. So first of all I’m just going to mince up about a tablespoon of garlic. Okay, a couple of onions, we’ll give them just a rough mince. That’s a strong 00:20. About a half of cup of celery. And we put a couple tablespoons of olive oil and one tablespoon of sweet butter in the pan to suck the 00:34.
A tablespoon of garlic goes in. some about a pound or a half of broccoli. This is actually more like a best of all puree than a soup and I love it because there are so many vitamins; vitamin C, and calcium, and iron in these green vegetables. And the way I cook them, we’re going to preserve all those wonderful nutrients right instill.
Now with these stems what we’re going to do is just slice them thin straight down. That will cook super quick and it will give a fantastic broccoli flavor of the soup and a lot of body at the same kind. Now the broccoli stems can go right in.
Now will give this about 45 seconds to sauté and give it a little of head start to the flowerets until they're a little bit tender. But we can add our fresh thyme right now.
So go ahead and add our flowerets and our chicken stock and get this soup on the road. All right five cups of chicken stock, you don’t have to use chicken stock soup like this. You can absolutely just do with water because there are so many vegetables in there. Put a good grind of black pepper. We’re going to simmer this for about six or seven minutes just until the flowerets are tender. And I want to go right into the blender with it.
And just in case, we’re going to put the towel just over this side here. All right, now for my secret ingredient, here’s a little bit of spinach. Nobody’s ever going to taste the spinach. All you’re going to get is all the chlorophyll which is the green and you get a really nice creamy consistency.
I want to tell you see this. You just want to stir this until it gets to room temperature. It’s that the greenest. It’s that simple.
