Bobby's Santa Fe Burger
Hey everybody I’m Booby Flay. South western flavors are my go-to ingredients. I like to use them from breakfast to dinner and even on a burger. Think about it, queso sauce, roasted green chilies and some blue corn tortillas. That’s the inspiration for my Santa Fe burger. Come check it out.
Today we're making Santa Fe burgers, green chilis, queso sauce, and blue corn tortillas. This is a poblano pepper. It looks like a green bell pepper. It’s a little more tapered at the end but it has a great pepper background flavor and a little bit of heat. So what I do is I roast the green chilies for my Santa Fe burger.
Let me show you how to make the queso sauce. We're going to start with some butter and some flour and we’re going to make what is known as rue. Okay, equal parts butter and flour. Let me get a whisk and stir it up.
South western ingredients are really special to me. I've been cooking with south western ingredients basically in my whole career and I love going to a place called Santa Fe New Mexico because they have fantastic food, the people are tremendous and also they make great margaritas.
So now that the flour and the butter have melted together, I am going to add a little bit of milk and this is actually going to make our cream sauce. They call this vega milk. It’s one of the mother sauces.
Okay. And now I am going to add some of the white cheddar picking up our sauce. Okay. And as that’s melting, I'm going to chop off my green chilli roasted, peeled and seeded. I like the texture of the chopped up green chillies as long as they are roasted, peeled and seeded so that they are nice and soft.
The cheese is melting. If it gets too thick, add a little milk. You want to make it a little thicker, add a little more cheese, salt and pepper—that simple. The queso sauce is done.
We're going to take our burgers off and we are going to make our Santa Fe Burger. We're going to take a little bit of our queso sauce, put it right on top of the burger, now our roasted green chilies and I'm going to take some blue corn tortilla chips because we try to crunch it by everything.
There it is. That’s our Santa Fe Burger. This one is a little messy but that means it’s good.
This is delicious the cheese the roasted green chilies, the blue corn tortillas, brings you right back to Santa Fe New Mexico. Margarita anybody?
