Male: You’re sitting on a private peninsula that has two beautiful beaches of four water sports facilities, full tennis facilities, a fabulous restaurant wonderfully refreshed villas and rooms that started as a sugar cane and coconut plantation in 1655.
Female: Wow, and how was it then changed the property over the years into what it is now?
Male: In 1953 a very famous Jamaican entrepreneur called John Pringle who decide that he is going to create the perfect getaway for his rich and famous friends. Persons like Bill and Day Payly, you kwon the founder of CBS television, one of the first owners and it has evolved around the same philosophy to this day. And it have 29 individual owners and when they are not in residence, their villas must be rented. One of our owners happens to be a very well known lifestyle designer Ralph Lauren and he has been very instrumental in giving us the right philosophy in terms of our furnishing. All our guest enjoy the best accommodations and the warmest Jamaican hospitality.
Female: Tell me about your philosophy when it comes to food.
Male: To me it’s called LCCC, light clean Caribbean cuisine.
Female: I love it.
Male: And when you put those on the plate, you have a different experience when it comes to Caribbean food.
Female: I understand that not only do you have a garden but you have an organic garden.
Male: That’s correct, everything that’s grown here at Round hill is all organically grown on this property and its amazing to work with fresh, fresh produce. It makes a tremendous difference when the clientele that comes around here they give you that twinkle in their eyes and wonder is this a real tomato. Because the flavors are just picked the taste of fresh burst are the fruits.
Female: What are we cooking tonight?
Male: Today we are going to do a little bit of Caribbean flat breads; I understand you’re from New York. Well let me show you my style of pizzas in the Caribbean, lets get cooking.
Female: Now first step, you already prepared the flat bread for us, is that right? Now where do we go from there?
Male: This is the crust, its just the pizza that we are going to rule out very, very thin. Now we are going to throw toppings on it. now I am going to show you all about organic style toppings. Now put a little bit of organic spinach that has been sautéed lightly. A little bit of tomato.
Female: Oh, that’s nice, yes.
Male: When you work with fresh products, you don’t have to cook it all the way through, so you don’t want to kill the vitamins that’s in them and all those beautiful nutrients.
Female: I understand that you actually are an award-winning chef.
Male: In 1999 I actually won chef of the year for Jamaica and in 2000. That is pickled onions with a little bit of vinegar, so put those on top in here and you can see the colors is—
Female: Yes, I love what you are doing with the color; it’s like rainbow, oh my goodness.
Male: Now we are going to finish it with a little bit of sweet peas.
Female: That’s a pretty Jamaican tradition is that right?
Male: In here yes, its sweet peas with a little bit of parmesan cheese in it, little bit of garlic and a little bit of salt and pepper and its good to go.
Female: That look fabulous I love it, okay.
Male: Do you want to try it?
Female: It’s so good I love it! I’m glad you enjoyed, what did you make first over here?
Male: I also have some beautiful shrimp empanada’s Caribbean style. The pasty dough is very flaky and inside of it you have a little bit of big bold flavors. You know in America they call it harbor nose, out here just scotch boney.
