Audra Lower: If you want to create a delicious home made meal in half the time. We turn up the pressure – talk about the pressure cooker, that is, for a yummy beef brisket that your whole family is going to love in today’s Better Bites.
Jenny: I'm Jenny from In Jenny’s Kitchen. And today, I'm going to talk about pressure cooking. I started pressure cooking about 10 years ago when I was a personal chef, and in about four hours, I would go into my clients homes and prepare meals.
So pressure cooking allowed me to not only get the job done pretty quick, but I could also offer dishes like short ribs and brisket that normally take three hours to brisk in the oven, they were ready in about 30 minutes. Flash forward 10 years, I have two children, so I don’t have a lot of time to spend in the kitchen and pressure cooking is a life saver again.
So today, we’re going to make a little bit of barbecue brisket. I'm just hitting up a tablespoon of olive oil, take our brisket which has been seasoned with a little bit of salt and pepper, and I'm just going to place it in here and we can hear we’re getting a nice little sizzle and we’re going to brown it. You want to make sure to brown it on all sides. And you could, if you wanted to, you really press for time, you could skip the browning step and you could go straight to sautéing your vegetables. But what you are going to have at the end of the browning are all of these wonderful little bit, and that’s just going to add some depth of flavor to your final dish.
So now that we have our brisket brown, I'm just going to transfer it to a dish and then I'm going to add – this is about three carrots that we have sliced about half an inch thick and then two onions which are quarter.
So we’re just going to cook them for about two minutes just until they get fragrant and start to develop a little bit of golden color. And while that is sautéing, I'm just going to talk a little bit about the barbecue sauce which is the secret ingredient, and the other shortcut that we’re using.
By using the barbecue sauce, I don’t have to use any extra herbs and flavoring. All of it is in here. And this is about a cup of barbecue sauce that I'm adding in here. To that, we’re going to add two cups of water and then you’re just going to give everything a good stir. This would be the time to season with a little bit of salt and pepper. And now, we’re going to let the pressure cooker do its magic.
We’re going to put the lid on and you want to make sure it’s locked into place, and then you’re going to set your pressure cooker to high pressure, and for time, we’re going to do this for 25 minutes for the brisket. Okay, we’ll press start and now, you can just sit back. Help the kids with homework, have a cup of coffee and clean the house.
Okay, so our brisket is all done and in 30 minutes, we have really wonderful mouthwatering tender brisket and now, we have about two and a half hours that you can spend inspection time with the kids.
