Hello everyone! Welcome to 2 Minute Chef. My name is Mario. Today we will be making Bacon Wrapped Scallops in a Beurre Blanc Sauce.
We are going to with our sauce. And what we are going to start with is half a cup of white wine; cooking wine is fine. We will just bring it to a pan. It's on medium, high heat.
Now, we are going to reduce this wine by half, and we are going to turn it up to high heat. Now, while that's cooking, we are going to wrap our scallops and bacon. And since the bacon has a little bit of smokiness and saltiness to it, we are not going to add any salt, but we are going to add a little bit of fresh ground black pepper.
Then we just roll it along.
We are going to go into the oven, 350 degrees, for about five to ten minutes. Now wine is beginning to reduce, and to this we are just going to add some nice little squeeze of fresh lemon.
Now to this we will add about, I would say, one to two ounces of heavy cream.
Now we reduce this mixture till its almost dry.
We will just bring this over, off of the heat. We are going to add our butter to the mixture. Now, here we have about say four ounces of unsalted butter. I say unsalted because once we finish incorporating the butter into the mixture, we will season it with salt and pepper to taste.
We will have it in a nice little serving dish.
And you can see the bacon, once it cooked, it just wrapped around the scallop, nice and firmly, so it won't be going anywhere. There is almost no need to skewer these.
We have our nice serving vehicle, and we just pour in the sauce. There you have it, Bacon Wrapped Scallops in a Beurre Blanc Sauce.
