Sweet Pepper Crostini is an easy open face sandwich that’s great as an appetizer or a snack. Baked baguettes slices brushed with olive oil, meaty roasted bread peppers and cheese, all toasted under the broiler, they're proof that could things come in small packages. Let’s get started, I’m going to slice a baguette and I'm using a baguette because it’s thin and long and I’m going to get those nice bite size pieces, and about six pieces. And were going to toast them in a 350-degree oven and that’s basically the difference between Crostini and brusquette. They’re smaller and go ahead and brush them before you toast them and then we’re going to top them with some sweet red bell peppers and some smoky, salty mozzarella. We’re going to pop them in the oven for about 15 minutes or so. And what I’ve done to the mozzarella to make it easier to grate is I've put it in the freezer for about 15 minutes. It hardens it up, that they won’t follow part when I start grating it. You know what? I can smell the smokiness right from one I start grating it and has strong aroma that’s going to go so well and compliment my sweet bell peppers. And now, some bell peppers, I am using jarred bell peppers, just for ease. They're already grilled and peeled for me and I’m just going to cut them into little strips. These are great as an order or a snack and you can smell how sweet they are, they have a sweet aroma. I’m going check on my bread and I’m going to pile on the toppings. These look fantastic, the cheese is melted. Let me take a bite and it’s hot. The bread is crunchy on the outside yet still tender on the inside and the fruity olive oil with the sweet red bell peppers and the smoky salty bite of mozzarella, fantastic. Any of these sandwiches are great at any time of day.
